These summer recipes are the perfect way to start the day

I don't know about you, but when summer rolls around, breakfast becomes a little more difficult. Heavy, rich breakfast foods don't sound super appealing when it's super hot out. But just because temps are soaring, that doesn't mean breakfast isn't still important.

Having a healthy meal early in the day helps balance your hormones, boost your energy and keep you satisfied throughout the day. Here are some light, refreshing recipes that will make you look forward to your summer a.m. meals...

Breakfast Banana Split

Craving a healthier version of the classic banana split? This recipe has you covered. Instead of ice cream, use vanilla yogurt. Sprinkle the yogurt with granola, fruits and nuts. For an added protein boost, add a spoonful of chia seeds and hemp hearts. Finish the dish off with a banana on top.

Egg Tartine

A tartine is basically an "open" sandwich. Instead of placing your filling between 2 slices of bread, you top a single slice—kinda like a healthier piece of pizza. This recipe features your choice of tomato or avocado, eggs and fresh herbs. (Pro tip: Drizzle with honey or balsamic vinegar for an elevated touch!)

This Strawberry Smoothie

If you've been obsessed with Hailey Bieber's skin glazing strawberry smoothie but don't live near an Erewhon store, this homemade version is the next best thing. The added banana makes the smoothie creamy, while the Greek yogurt adds a boost of protein.

Blueberry + Oat Muffins

If you have some extra time in the morning, bake these scrumptious blueberry + oat muffins. (Or set aside a few hours on Sunday to meal prep them for the week!) They're sweetened with honey instead of sugar, making them a healthier (but still sweet) breakfast option. We love adding an extra sprinkle of cinnamon—plus a scoop of plain protein powder for added nutrition.
