Babymouse Cupcakes
Makes about 18 cupcakes

You’ll need:

2/3 cup chopped fresh strawberries
1 stick butter, room temperature
1 cup sugar
1 large egg plus 2 large egg whites
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk, room temperature
1 tsp vanilla extract

Directions
1. Preheat the oven to 350 degrees F. While the oven is heating, prep a cupcake pan with paper liners.
2. In the bowl of an electric mixer, beat together the butter and sugar on medium speed until completely blended (you can also use a hand mixer). Slowly beat in the eggs one at a time.
3. In another bowl, combine the flour, baking powder and salt. Slowly add these dry ingredients into the mixer bowl, alternating a little of the flour mixture with a little of the milk. Continue adding and beating until all the dry ingredients and all the milk are in the bowl and combined. Add the vanilla.
4. Turn off the mixer and remove the bowl. Using a spatula or wooden spoon, fold in the strawberries.
6. Spoon the batter into the prepared cups, dividing evenly.
6. Bake 23 to 25 minutes.
7. Let the cupcakes sit until cool to the touch.
Frosting
 
You’ll need:
1 stick of unsalted butter, room temperature
8 oz cream cheese
2 cups powdered sugar, sifted
1 tsp vanilla extract
Red food coloring

Frosting directions:
1. Mix the butter and cream cheese together with an electric beater on medium speed until very smooth.
2. Add in the vanilla extract and, while mixing, slowly add the powdered sugar.
Helpful hint: Have your friend pour in the powdered sugar while you mix!
3. Adding just one drop at a time, mix in the red food coloring until pink throughout.
4. Place in the fridge for no more than 15 minutes to allow it to chill.
5. Pile the frosting on top of your cool cupcakes.
