WE TRIED IT: Eat More Mushrooms!
Button. Portobello. Shitake. Oyster. Who knew there were sooo many diff types of mushrooms? This week, I tested out tons. YUM!
Turns out, September is National Mushroom Month. To celebrate, Golden Gourmet sent over massive amounts of organic King Trumpets, Beech mushrooms and more. Normally, I think of mushrooms in one context: pizza topping! Not anymore.
I decided to take these fabulous fungi and make the most of their way-nutritious nature. Mushrooms are packed with B Vitamins, minerals like Selenium and are low in calories. Perfect! I sautéed a bunch of them with shallots. Then, I added a giant can of low-sodium chicken broth and a few handfuls of spinach. Souper easy and delish.
Here are few other things you could do with these capped cuties to get a major health boost:
Chop ‘em up and throw them on salad
Stir-fry them with tonsa veggies
Toss them on tiny whole-wheat pita pizzas or right into pasta sauce
Put them in omelets or scrambled eggs
Trying out King Trumpets and baby Beech means I’m gonna buy more than just plain white mushrooms the next time I hit the grocery store.
