We're eating cookies for breakfast... and you can do the same!
Here’s something you’ve probably been waiting to hear forever: You can have cookies for breakfast! These healthy and filling bites are everything you’ll need to start your day off right. Full of whole grain oats, nuts, seeds and dried fruit, this healthy option is the perf replacement for your donuts and sugary cereal—and they taste just as good, if not better. You’d normally think that cookies are so not a breakfast food, but we’re proving you wrong, girls. These treats will leave your bod *and* taste buds feeling great.
Ingredients:
• ¾ cup peanut butter
• ¼ cup melted coconut oil
• ¼ cup warmed honey
• 1 cup old-fashioned oats
• 1 cup quick oats
• 1 ripe mashed banana
• ¾ cup dried fruit of your choice
• ½ cup seeds of your choice
• ½ cup nuts of your choice
• ¼ cup ground flax
• 1 teaspoon ground cinnamon
• ½ teaspoon sea salt (only if using unsalted nuts)
Directions:
1. Preheat oven to 325 degrees F. Combine peanut butter, coconut oil and honey until smooth.
2. Place all other ingredients into a large bowl. Mix with the peanut butter mixture until evenly distributed.
3. Drop about ¼ cup sized scoops of the mixture onto a cookie sheet and flatten (the cookies won’t spread while baking). Bake for about 15 minutes until edges are lightly browned.
4. Let cookies cool on baking sheet before moving to an air-tight container.
