Tofu Stir-Fry
I've always been a picky gal when it comes to healthy eating. And I know that you're probably thinking "Tofu…yuck." But it's a totally different source of healthy program if you're tired of the same ol' turkey. Yesterday I faced my fears and gave it a whirl.
I chopped up some of the tofu and put it on the stove in a saucepan on medium heat. I decided to add one of my faves- extra-virgin olive oil- to the tofu. I added some basil and garlic seasoning to try and spice things up.
When the mix had cooked up for a few minutes I added some store bought-broccoli to my creation. (I know. Broccoli? Really? But yes, I am a true fan of this vegetable. I think it's totally yummy- raw OR cooked). After stirring that in for a few more minutes, I turned the heat off and set the pan on another burner to cool off.
When it was all cooled I put in on a plate and tried the tofu out. And surprise! It was actually pretty good!
While I'm not sure I'll be eating tofu every day will I try tofu again? Natch. It's a totally healthy way to get lean protein and it tastes pretty delish!

BONUS RECIPE!
Soccer Smoothie Serves 1-2
A great sports drink, this smoothie has soy protein that will stick with you throughout the entire game. “Silken” tofu* is a non-refrigerated smooth tofu that can be found on the supermarket shelves or at your health food store. The brand we use is “Mori-Nu”.
6 ounces (1/2 package) soft silken-style tofu
1/4-1/2 banana
3/4 cup orange juice
1 cup frozen strawberries
1 teaspoon honey or sugar
Using a scissors, cut open the tofu package over a bowl. Put all the ingredients in a blender. If you don’t like bananas, only put in a small piece. Hold down the blender top with one hand, then blend until smooth.
