Tex-Mex Wrap
What You’ll Need: Serves 1 - Vegetarian
1 flour tortilla
1/4 cup spicy refried beans
1/2 cup grated cheddar or jack cheese
1 green onion, chopped
Optional: 1 plum tomato, diced into small squares
Salsa on the side – for dipping
Place the tortilla on a piece of foil. Spread a thin layer of refried beans on the tortilla almost up to the edges. Sprinkle on the cheese, onion, and tomato. Roll up and cut in half with a serrated knife; wrap tightly in foil. Pack the salsa in a small, plastic container.
