Gobbler Sub

This is an Italian-style sub minus the salami and mortadella. For a party, you would need to double or triple this recipe, depending on the number of guests. Find a very long baguette and some fancy party toothpicks.

What You’ll Need: Serves 2

o    1 (eight-inch long) baguette or a skinny loaf of Italian bread, white or whole wheat
o    1 small bottle mild (not hot!) giardinerra
o    3 slices roast turkey
o    3 thinly sliced provolone (or another mild cheese)
o    1 medium tomato
o    Romaine lettuce
o    1 small red onion

Optional: mayonnaise

What You’ll Do:

1. Lay out all of the ingredients on the kitchen counter. Carefully cut the baguette down the center lengthwise with the bread knife, cutting all the way through the bread.

2. Slice the tomato into thin circles. Lay two Romaine lettuce leaves on top of each other. Cut across the leaves, chopping the lettuce into half-inch strips. Using a chef’s knife, cut the end off of the onion, peel, and slice into very thin circles.

3. To assemble: Spread the giardinerra on the bottom layer of bread. Spread mayonnaise on the top piece of bread. Fold each turkey slice in half or thirds to make it fit on the sandwich; some can hang over the edge of the bread. Place the cheese on top of the turkey; follow with a layer of sliced tomatoes, chopped lettuce, and sliced red onion. Wrap in butcher paper and refrigerate for up to 2 hours, if necessary, or eat immediately.

To Serve: Unwrap the butcher paper; serve the sandwich on the paper. Stab a toothpick into the sub every two inches so the sandwich won’t fall apart when you slice it. Using a bread knife, slice the sub into two-inch pieces.
