Give breakfast a sweet spin with these cinnamon roll pancakes

The most important meal of the day just got a *major* upgrade with these amazing pancakes. Gooey, sweet and super scrumptious, they taste just as delish with the dairy-free substitutes listed below. Whip these up for brunch with your besties or Sunday morning breakfast with your fam!

To make these, you will need: 

Cinnamon filling:

-6 tablespoons packed light brown sugar

-1 teaspoon cinnamon

Icing:

-4 tablespoons (1/2 stick) unsalted butter (optional)

-2 ounces cream cheese, at room temp

-3/4 cup powdered sugar

-1/2 teaspoon vanilla extract

Dairy-free icing:

-1/4 cup non-dairy yogurt

-1 tbsp almond milk

-2 tbsp powdered sugar

Pancakes:

-1 cup all-purpose flour

-2 teaspoons baking powder

-1/2 teaspoon salt

-1 cup milk (dairy-free: use water or unsweetened almond milk instead)

-1 egg

-1 tablespoon canola or vegetable oil

Directions:

Cinnamon filling:

-Stir the brown sugar and cinnamon together and set aside.

Icing:

-If desired, melt the butter on the stove using low heat. When melted, turn off the heat.

-Whisk in cream cheese until the mixture is almost smooth. Add the powdered sugar and vanilla extract. Set aside.

Dairy-free icing:

-Mix together the non-dairy yogurt, almond milk and powdered sugar until smooth. Set aside.

Pancakes:

-Whisk together flour, baking powder and salt. Next, whisk in milk (or dairy-free substitute), egg and oil.

-Heat a nonstick skillet and coat with cooking spray. Use a measuring cup to scoop the batter into the pan.

-When the pancake begins to look bubbly, sprinkle the cinnamon filling on top so it looks like a cinnamon swirl.

-Wait 2-3 more minutes until the bubbles start to pop and the pancake looks golden brown on the bottom.

-Flip the pancake and cook until done—the other side will be golden brown.

-Once cooked, drizzle glaze over pancakes and enjoy! Makes 8 pancakes.
