Eat Right
Easy summer spring rolls!

There’s lots of room for creativity and when it comes to making these rolls. Just like mixing and matching with clothes, you can do the same with this delish dish.
What you’ll need…
Fillings
Leaves: lettuce, spinach, kale, cabbage
Herbs: Thai basil, basil, cilantro, mint, scallions
Creamy: avocado, sweet potato
Crunchy: cucumber, carrots, bell peppers, jalapenos, bean sprouts, jicama, daikon
Fruits: mango, strawberries, pineapple
Protein: tofu, crab, cooked shrimp or chicken, edamame
Base ingredients
Noodles (grass rice or “bean thread”)
Rice paper
What to do…
1. Prep your fillings by rinsing off and chopping up any fruits or vegetables into thin slices. Soak your until soft.
2. Fill a large shallow baking dish with warm water. Dip the rice paper wrappers into until the wrapper softens but is still a bit firm.
3. Place wrappers on a flat surface and add your tasty ingredients, starting with your leafy fillings. Be certain to pile your ingredients to the edge closest to you and roll forward, to create your wrap. Continue rolling forward, and then let the roll rest on its crease to seal.
4. Enjoy!

1/4 cup natural creamy
peanut butter
1 1/2 tablespoons water
1 tablespoon hoisin sauce
juice of half a lime
1 teaspoon soy sauce
1 teaspoon sugar
