3 yummy summer salads
Between boardwalk fries and burgers, it can be tough to find awesome, healthy things to eat during vacay season. Luckily, it's the best time of year to dig into way chill greens. There are tonsa types of salad, so for you gals who don't heart veggies, there are plenty of other options too. Oh and when it comes to salads, we like to make a li'l or a lot, depending on the time of day and how hungry we are. Just estimate when you're whipping these up.
The Classic
Dig salad? This is your best pick. Start with romaine lettuce (1-2 cups). Add some chopped carrots, sliced red or orange peppers, cucumber, and cherry tomatoes. Then, toss in the classic favorite, grilled chicken. (Vegetarian girlies skip this step!). To finish, drizzle on little of your favorite vinaigrette and enjoy.
Protein-lovers
Here's the perf salad for all you carnivores out there. Start with some nice dark leafy greens, like spinach. Pop in your fave sandwich toppings, like tomatoes, olives, onions, a dash of shredded cheese. Add some lunch meat, but to keep it healthy, keep it lean (like grilled chicken or turkey) and avoid the really fatty meats (think salami).
The juicy fruity salad
Go sweet, girl. Begin with a bowl of baby spinach. Mix in some fresh fruit, like strawberries, pineapple, red apple chunks and blueberries. To balance all the sugar, pile on some almonds or pecans and, if you like, some crumbled feta cheese. Toss in some grilled chicken if you have leftovers. Add your fave balsamic dressing.
