5 delish gingerbread recipes to make this season

Baking might be *the* coziest winter activity. And nothing screams holiday like the spicy scent of gingerbread wafting from the oven. Traditional gingerbread men are so cute (and who doesn't love decorating gingerbread houses to the nines?).

But if you're in the mood for something new, try one of these fab recipes for gingerbread treats that go beyond the classic cookies. You can even spread the holiday spirit by sharing some with your friends and fam. One warning: There might not be any leftovers!

1. Gingerbread cupcakes

@charleyshealth

When most of us think about gingerbread, we think of little houses with frosting decorations and gingerbread women and men. But this recipe for gingerbread cupcakes is just one of the cute ways to add gingerbread flavor to your baking beyond the traditional cookies! Try decorating your cupcakes with miniature store-bought gingerbread men or cranberries and rosemary leaves for some festive flair.

2. Gingerbread mince pies

@bbcgoodfood

Mince pies are a traditional English holiday dessert. They're usually made with meat, but this vegetarian (and absolutely delicious!) version uses gingerbread, apples, cinnamon and nutmeg for a delectable wintry treat. Sprinkle some powdered sugar on top and decorate with little dough cut-outs for a cute and classic treat!

3. Gingerbread with cream cheese icing

@cravingsbycaroline

This recipe (in the IG post) makes a classic fresh-from-the-oven gingerbread with a delish cream cheese icing! Even better, it uses less sugar than traditional gingerbread, so it's perfect for a before-school breakfast or an afternoon snack that's seasonal *and* healthy.

4. Vegan gingerbread bliss balls

@thetoastedpinenut

Looking for something super easy and full of nutrients? These vegan bliss balls don't need any baking. You just throw almond flour, spices, quinoa, peacans and chocolate chips in a bowl and roll them into balls! So simple and nutritious—and easy to grab when you're on the go.

5. Chocolate chunk gingerbread blondies

@bakeritablog

Here's another fab vegan treat! These blondies take the familiar flavor of gingerbread and add chocolate for unbelievably yummy bars. Pro tip: Take these beauties out of the oven a minute or two on the sooner side (making sure they're still cooked, ofc!) for hot, melty, gooey centers.
