Editor's Blog: My Yummiest-Ever Fall Foods!

Even though summer is over, I’m still doing the garden girl thing and noshing on tonsa fruits and veggies. Here are a few of my fave autumn-inspired eats (and what’s on my plate at the moment).
Keep reading and fuel your bod with the best harvest that this season has to offer!

Bite into a plum
Plums are stacked with vitamins A and C and, let’s be honest, are just plain delish. I love them as-is or dropped in a parfait glass of Icelandic yogurt and a sprinkling of granola.
 
Cut up some cauliflower
Oh boy! I was out to din the other night with some friends when cauliflower came up (nerdy, right?). The debate: Is it nutritious or not? Sure, it might look like broccoli drained of all its nourishing green hue but, truth is, it’s stacked with fiber and vitamin C. Chop it up and dip it in hummus or search for a recipe on how to roast it. The result is impossibly tasty.
 
Become BFFs with butternut squash
OK, that’s a stretch. But, OMG, how good is this rich veg? Once it starts to get a bit of a chill out there, I could eat this soup all day. Check out this yummy butternut squash soup recipe and let us know what ya think!
