Veg-ify Your Summer!
Now’s the perfect time to up those healthy eating ways. The tomatoes are turning red and the corn is eye-high. We’ve got a few yummy tricks for making those veggies wayyy more interesting...not to mention yummy. Ready to take the veggie challenge? Here goes, girl!
Soup Up Your Salad
Buh-bye boring greens. Top your lettuce with all the goodies the garden has to offer. Swap standard lettuce for vitamin-stacked Romaine and then pile on everything under the sun. Aim for a rainbow’s worth of vegetables...and fruit. Yep, strawberries, pears, apples or raspberries all add a sweet touch. Pour on the protein with some beans and nuts. Instead of drowning your creation in ranch, search around for a healthy dressing recipe online (they’re secretly super-easy to make). Need crunch? Pass by croutons and go for toasted pumpkin or sunflower seeds.
Swap Out Your Sandwich
Summer is filled with salads, from tuna and chicken to egg and ham. Instead of slapping them on bread, try stuffing a tomato instead. Buy a big tomato from the farm stand. Slice it like a star, so the middle opens up. Fill it with your fave salad du jour. Drizzle on some balsamic vinaigrette and call it lunch!
Bulk Up Your Not-Burger
It seems like there’s a BBQ nearly every day of summer. If you’re spending the day grilling, see if you can get more veggies in the mix. Forget the beef for a sec. We LOVE getting super creative with our veggie burgers. Here are a few creative creations to try. Don’t forget to have whole wheat buns!
Hearty: Cheddar cheese, red onion, sauteed mushrooms and BBQ sauce
Spicy: Avocado, salsa, and spicy jack cheese
Greek-inspired: Cuke slices, plain yogurt and tomato
