CAMPFIRE SPECIAL: Easy Pita Pizza Pockets!

We love camping…partly because we get to make yummy foods like these pizza pockets! They’re healthy and super easy to make, whether you’re cookin’ them over a campfire stove or in your kitchen. This recipe is for a classic veggie pizza, but you can adjust it to include your fave toppings too. And don’t forget to finish off the meal with some s’mores!

What You’ll Need:

1 package of Pita bread
1 container of pizza sauce
1 bag of shredded cheese (snazz it up and try a diff flavor for a new taste – shredded cheddar could be cool)
1 bunch of broccoli
1 green or red pepper
1 package of mushrooms
1 roll of tinfoil

What You’ll Do:

1. Wash and cut up the veggies.
2. If you’re at home or have a saucepan, stir fry the veggies (add some onion for flavor). If not, you can just add ‘em raw!
3.  Cut the pita pocket around its edge – about ¼ to ½ of the pocket should be open.
4. Spoon in the pizza sauce, and then stuff the pita with as many veggies and as much cheese as you like.
5. Wrap the pita in tinfoil, and then stick it on the campfire stove or in the oven for about 10-15 minutes. Check to make sure it’s done (the cheese will be melted when it's ready).
6. Pull back the foil and enjoy!
