#Mmmmmonday: This M&M skillet cookie is a game-changer

 

Cookie cravers, it's time to celebrate. Instead of baking an entire batch of cookies just for one little afternoon snack, our solution is simpler: make one large, chocolatey cookie. Stuffed with M&Ms and chocolate chips, this golden-brown goodie is too tasty to resist. (Psst—you can substitute Reese’s pieces and a drizzle of peanut butter for a nuttier combo!)


What you’ll need:

  • 1 cup unsalted butter, softened to room temperature
  • ½ cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla
  • 2 ½ cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ¾ cup mini M&Ms 
  • ice cream and chocolate syrup for topping (optional) 


What you’ll do:

1. Preheat your oven to 325°F and lightly grease an oven-safe skillet that is between 9 and 12 inches in diameter. 

2. In a large bowl, beat the butter until it’s completely smooth. Then, add in both the brown and the granulated sugars and beat until the mixture is light and fluffy. Next, beat in the eggs and vanilla until combined. 

3. In another bowl, whisk together the flour, cornstarch, baking soda, and salt. 

4. Slowly add the dry ingredients to the wet ingredients until they have combined into a thick dough. 

5. Stir in chocolate chips and M&Ms until they are evenly distributed throughout the dough. 

6. Use a rubber spatula and spread the cookie dough evenly in the greased skillet. 

7. Bake in the oven for 30-35 minutes until the cookie is puffed and lightly browned all over. Keep an eye on the cookie and cook for a few more minutes if you desire a crispier cookie. 

8. Allow the cookie time to set and cool slightly before taking a bite. If you’re sharing with friends, slice and serve, or give everyone a spoon so you can dig in together. If you want, top your cookie with vanilla ice cream and drizzle on chocolate syrup.
