Seriously delish: Roasted pumpkin seeds
Love pumkin season and all the flavored treats that come along with it? We do, too! But what about those seeds? When you're ready to start carving that pumpkin, don't toss those suckers in the trash. Instead, follow this recipe for the perf healthy and yummy fall snack that'll be sure to cure those cravings, stat.
Ingredients:
- 1 large pumpkin
- 1 tsp Salt
- 2tbsp Olive Oil
- ½ cup Cinnamon
- 1 cup Sugar
Instructions:
1. Cut off the top of your pumpkin. You’ll be doing this anyway if you planned on carving it.
2. Scrape out the insides using a large spoon. Yes, it’s gross and slimy, but totally worth it, promise!
3. As your pulling out the guts, pick out the seeds and put them into a large mixing bowl. Try to get them as separated from the slimy orange insides as you can. Once you have a bowl of seeds, rinse them well; to once again make sure all the orange pumpkin pieces are removed.
4. Before staring the rest, you should preheat your oven to 325 degrees Fahrenheit.
5. Boil the seeds. Put water into a medium saucepan and add 1 tsp of salt and your seeds. Once boiling, turn the heat down to low and let the seeds simmer uncovered for ten minutes. This softens the seeds up which will make them easier to chew and digest. Drain the seeds and put them back into your bowl.
6. Pour olive oil over the seeds and use your hands to mix them in the bowl so all seeds are coated. If you need to add more oil, go for it.
7. Add cinnamon and sugar. We suggested measurements above, but you can adjust depending on how many seeds you have and how sweet you want them to taste. You can mix the cinnamon and sugar together beforehand, or just pour them separately into the bowl then mix like you did with the oil. Make sure the mixture gets over all the seeds (the olive oil should help the sugar stick).
8. Spread out your seeds on a baking sheet (put tinfoil down first so they don’t stick).
9. Bake the seeds in the oven for ten minutes. Remove from the oven and carefully stir them around a bit on the pan. You can also add more sugar/cinnamon or oil.
10. Put them back in the oven and bake for another 8-10 minutes. During the last few minutes, do a taste check to make sure the insides aren’t burning! You want the outer seed to be crispy and easy to bite through.
11. Your sweet (but healthy!) fall treat is complete. Enjoy! And don’t forget to carve your pumpkin too.
