Love at First Bite: Edward's Sparkle Cake

What You’ll Need: Serves 10
1 Package Angel Food Cake Mix
1 Package (3 ounces) Strawberry Jell-O
1 Cup Boiling Water
1 Package (1 pound) Frozen Strawberries
1 Cup Whipping Cream
2 Tablespoons Sugar
Fresh Strawberries (optional)
What You’ll Do:
Bake the angel food cake as directed on package. Let cool.
In a large bowl, dissolve the Jell-O in the boiling water and add the frozen block of strawberries, stirring to break up and mix the berries.
Place the cake, widest side down, on the serving plate. Cut a 1”-thick layer from the top and set aside. Cut around the cake 1” from the outer edge to within 1” from the bottom. Gently remove the section of cake between the cuts, and tear it into small pieces. Fold the pieces into the strawberry mixture and pour the mixture into the cake shell. Place the reserved cake layer on top.

Whip the cream until thick and stir in the sugar. Spread over the top and sides on the cake. Decorate with fresh strawberries, if desired. Refrigerate for at least 1 hour before serving.
