Very Berry Cake

Little Bunny Foo Foo isn’t going to be the only one eating berries this spring. The fruit is fresh, so it is the perfect season to satisfy your sweet tooth.


This Very Berry Cake will be a tasty addition to any meal, and the Easter bunny will be quite impressed!


What You’ll Need:

1 pound cake
Low-fat vanilla ice cream
1 can whipped cream
4 cups frozen unsweetened berries
1/3 cup raspberry (or other berry) juice

2 T. honey
3/4 tsp. almond extract
1 ½ tsp. flour


What You’ll Do:

1. Using large serrated knife, slice cake lengthwise into thirds so there are three 1-inch layers. Place on dessert platter, and cover with plastic wrap.


2. In a large non-stick skillet, combine juice, honey, extract and flour. Stir over medium heat until it starts to bubble and thicken. Add frozen berries and cook a few minutes. Let cool, or refrigerate until needed.


3. Spoon some sauce onto bottom layer, then put next layer and drizzle sauce down center of cake, lengthwise.


4. Before serving, spray whipped cream on either side of the berry stripe and around the outside of the cake.


5. Slice into 1-inch pieces. Top with ice cream and a little sauce.
