Penne with Salami and Peas

Are all of those leftover Valentine’s sweets getting to you? It’s time to throw something healthy and delish into your diet. This pasta isn’t just yummy...it's also really easy to make!


So put on that apron and whip up this awesome meal—your family won’t believe how great of a cook you are!


What You’ll Need:

½ pound (1/2 package) penne pasta or rigatoni
2 ½ tablespoons olive oil
3 large cloves garlic, peeled
1 cup frozen peas
4 slices Genoa Italian salami
dash of cayenne pepper
salt and freshly grounded pepper
¼ cup each: freshly grated Parmesan or Romano cheese, chopped parsley


What You’ll Do:

1. In a large sauce pan, bring water to a boil. Once it’s boiling, add the pasta and boil until the pasta is tender. Drain well in a colander or strainer and pour into a large bowl.
2. While pasta is cooking: chop garlic into little pieces, slice salami into ¼ inch strips and cut them in half, chop the parsley.
3. In a large skillet, heat the olive oil for about 10 seconds, then add the garlic and peas. Stir until the peas are hot, then remove from heat.
4. Add the peas and garlic mixture to the pasta and toss with cheese, seasonings, and parsley.
