3 party-perfect summer desserts you'll love

Searching for something sweet to whip up for a little get-together you’re hosting (or attending)? We’ve got three recipes that are all yummy and a #pieceofcake to make. Plus, they look super fancy so *all* your friends will be impressed—check 'em out below.

Blackberry white chocolate fool with toasted hazelnuts 

Ingredients:

- 4 cups fresh blackberries 
- ¼ cup and 3 tablespoons of sugar 
- ½ cups cold, heavy cream 
- ¼ cup cassis 
- 3 ounces of melted white chocolate
- Mint leaves for a garnish

Directions:

1. Place the berries in a large bowl.

2. Add ¼ cup sugar and 2 tablespoons of cassis, then stir well and let sit at a room temperature for 30 minutes. 

3. Remove half of the berries and mush with a fork until it reaches a pureed consistency.

4. Strain the mixture into a bowl.

5. Whip the cream, 3 tablespoons sugar, and 2 tablespoons cassis in a large bowl until stiff points form.

6. Add in the white chocolate and strained puree. Chill for an hour.

7. Layer bowl with the berry-cream mixture and whole soaked berries.

8. Sprinkle with the chopped hazelnut and create a garnish with mint.

 

Peanut butter no-bake cheesecake 

Ingredients:

- 8 ounces softened cream cheese
- ⅓ cup sour cream
- ¾ cup room temperature, smooth peanut butter
- 1 cup and 3 tablespoons confectioners’ sugar
- ⅓ cup roughly chopped roasted peanuts
- 1 nine inch prepared graham cracker crust
- 1 cup heavy cream
- ¼ cup unsweetened cocoa powder
- Peanut butter chips to make garnish
- Chocolate sprinkles for garnish

Directions:

1. Blend the cream cheese, sour cream, peanut butter and 1 cup of the confectioners’ sugar with a hand mixer until smooth and creamy.

2. Sprinkle chopped peanuts around the bottom of the pie crust, then spoon the cake filling on top, smoothing the top and spreading the filling to the edge.

3. Cover the cheesecake with plastic wrap and place in the refrigerator until set, at least 3 hours.

4. Whisk the heavy cream, cocoa powder and three tablespoons of confectioners’ sugar in a medium mixing bowl until dissolved. Cover with the plastic wrap and refrigerate.

5. When it’s ready to be assembled, whisk the cream and cocoa powder mixture until medium peaks form.

6. Place the cocoa whipped cream into a resealable bag and squeeze the icing toward one of the corners of the bag.

7. Cut a small opening at the corner with the icing.

8. Using the frosting to create any pattern you like around the edge of the pie.

9. Sprinkle peanut butter chips and chocolate sprinkles on top of the whipped cream.

S’moreos 

Ingredients:

- 12 chocolate Oreo cookies  
- 12 marshmallows
- 12 squares of milk chocolate candy bar

Directions:

1. Preheat the broiler. Twist the top halves off the cookies and arrange the cookie bottoms, cream-side up, on a baking sheet.

2. Place a piece of chocolate on the cream filling and then top it with a marshmallow, laying on its side.

3. Broil until the marshmallows are golden, about 30 seconds

4. Make sandwiches with the remaining cookie tops.
