Make your own Chipotle burrito at home
Calling all Chipotle fanatics: Now you can recreate your fave fast food meal in your own kitchen. Follow the recipe below for a burrito that's *just* as delicious as the ones you get at Chipotle...but a little bit healthier.
Ingredients:
For the meat...
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper
- pinch of salt and pepper
- 2 tsp vegetable oil
- 1 pound skirt steak
For the salsa...
- 4 roma tomatoes, diced
- 1 cup finely diced red onion
- 1 jalapeño chile, seeded and minced
- 2 tbsp fresh chopped cilantro
For the rice...
- 2 cups cooked basmati rice
- 1 1/2 tbsp lime juice
- 1 tsp vegetable oil
- 2 tbsp fresh chopped cilantro
- 1/4-1/2 tsp salt
For the burrito...
- 1 can (15 oz) black beans, rinsed, drained and warmed
- 1/2 cup sour cream
- 4 (10-inch) flour tortillas
Directions:
1. Combine spices (oregano, cumin, garlic powder, onion powder, red pepper, salt and pepper) and rub over the steak with the vegetable oil. Put in the refrigerator while you make the rest.
2. In a small bowl, mix the tomatoes, jalapenos, onion and 2 tbsp of cilantro.
3. Lightly drizzle the lime juice and oil over your cooked rice and fluff in 2 tbsp of cilantro.
4. Heat a grill (or grill pan if you're using the stove) to medium high and cook the steak for about four minutes on each side, or however you like it cooked. Remove from the grill and set aside for five minutes. Then slice thinly.
5. Warm tortillas in the microwave, then stuff with your rice, salsa and meat. Add in beans and sour cream (and guac!) if you'd like, then eat up.
