Try this to sneak veggies into your breakfast

 

We love a big bowl of oatmeal before school in the morningit's quick, easy and super filling. We also love finding new ways to eat more veggies (hello, green smoothies that taste like milkshakes and zoodles that are almost better than pasta!). Our latest obsession? Zoats, a.k.a. oatmeal with shredded zucchini mixed in. They're popping up all over Instagram and for good reason. Here's how to make your own bowl of deliciousness for breakfast tomorrow.

 

Vegan Chocolate Zoats 

You'll need:

1/2 cup oats
1 cup shredded zucchini (1 medium zucchini will do)
1 cup + 6 TBSP almond milk (or soy)
1 banana, mashed
1 TBSP cocoa powder
2 TBSP chia seeds

Directions:

1.  Stir 6 tablespoons of almond milk with the chia seeds in a small bowl and allow to thicken.

2. Cook the oats, shredded zucchini and 1 cup of almond milk for about 5 minutes on medium heat in a small pot.

3. Remove from heat and stir in the mashed banana, cocoa powder and chia seed mixture.

4. Divide between two bowls and top with your fave fresh fruit and coconut flakes. Add some nut butter for even more protein-packed goodness!
