Easy Fruit Crumble

What You’ll Need: Serves 9

Frozen fruit won’t work for this dessert so wait for the sweet, summer fruit.

3 cups fresh berries, use a combination (blueberries, raspberries, pitted cherries
2 cups sliced ripe nectarines or plums (not peaches – too juicy), about 2 nectarines, 3 plums
1 tablespoon sugar
1 teaspoon white flour

Topping:

1/4 cup dark brown sugar, packed
1/2 teaspoon cinnamon
1 cup unbleached white flour or whole wheat pastry flour
3 tablespoons unsalted butter, melted

What You’ll Do:

1. Preheat oven to 375. Measure the berries and pour into an 8” square or baking pan. Cut the nectarines or plums in half through the stem. Pull out the pit and slice into half-inch slices. Cut across the slices so they’re cut in half. Measure and add to the berries. Stir in the sugar and flour.

2. In a medium mixing bowl, mix the sugar, cinnamon, and flour together with a fork. (Measure the flour by spooning it into the cup with a large spoon and leveling it off with a knife.) Add the butter and mix until the dough is the size of small peas.

3. Spoon evenly over the top of the fruit. Bake for 40-45 minutes until the top is lightly browned and the fruit is bubbly. Cool for at least 30 minutes before serving into bowls. Top with vanilla yogurt, vanilla frozen yogurt, or ice cream.
