Survive Thanksgiving as a vegetarian with these recipes

 

Thanksgiving is one of the *best* holidays. Bring on the stuffing, the mashed potatoes, the pumpkin pie...and the turkey. Uh-oh. You're a vegetarian and while all the side dishes are delish, they really don't make much of a balanced meal (where's the protein?!). If you're heading to grandma's for the holiday, instead of asking her to make something meatless just for you, why not whip it up yourself? Try one of the recipes below for a very veggie Thanksgiving:

 

Chickpeas with butternut squash sauce
This dish full of cheesy deliciousness will win over even the most dedicated meat-lovers.

Try this take on the classic turducken made with eggplant, zucchini and butternut squash.

Play up your fave fall squash with a hearty superfood mix of quinoa, cranberries and kale.

Who says pie is just for dessert? This savory recipe is a cinch to make with store-bought crust but if you're feeling extra bold, you can make it from scratch.
