Could you deal with an all-veg cafeteria menu?

Sure, we can handle going vegetarian for a night or two--even a whole day! But all week, every week? That's crazy talk...or is it?

One elementary school in NYC is doing just that. After trying all-vegetarian lunches a few times a week, the response was so positive, the school decided to switch their caf to 100-percent veg, 24/7. And so far, so good, The Huffington Post reports. PS 244 has been hailed as a trailblazer, and is supposed to be the first public elementary school in the U.S. that's taken such measures to instill healthy eating in the school community. The kids' favorite offering? Black bean and cheddar quesadillas. Gotta admit, that sounds pretty good to us!
