3 sweet potato recipes to satisfy your French fry craving

Every so often, we all crave those greasy salty fries from our favorite fast food place (they're just *so* good!). And fortunately, eating healthy doesn't mean giving up those delicious treats. Here are three sweet potato fry recipes that will help you avoid the drive-thru and keep your bod happy, too.

Crispy Sweet Potato Fries
from The Greedy Vegan

Ingredients:
- 1 sweet potato
- 2 tsp of corn starch
- Black pepper
- Smoked paprika
- 2 tbsp of olive oil
- Sea salt to taste

Directions:
1. Peel and cut sweet potatoes. Then let them sit in a bowl of cold water for 45- 60 minutes (this makes them extra crispy).

2. Remove from water, rinse and dry potato straws. Add corn starch and mix until coated.

3. Place fries on baking sheet, drizzle with olive oil then season to your liking.

4. Bake fries at 390 degrees for about 30-45 minutes.

5. Quickly open and then close oven door as olive oil starts to bubble to let out steam.

6. Once done, let fries sit for 5-10 minutes then add salt and dig in!
